Red Bean is a good choice for vegetarian. It is rich in protein, vitamin B complex, soluble fiber, and other minerals such as iron, copper and phosphorus. Iron helps produce red blood cells, which may prevent anemia. In addition, red beans also provide the amino acids that can be  found in meat, which makes red beans a good substitute.  In general, eating a bowl of red beans can replace 6oz of meat protein. However, patients with gout, high uric acid or gastric acid should avoid eating too much red beans.
